A dream come true

The news of the accidental discovery of 168 bottles of 19th century Champagne in a wreck of a ship wrecked in the Baltic Sea 200 years ago and still drinkable today. The unrealized desire to taste a cup, the curiosity to know its secrets, the idea of being able to repeat that magic on the seabed of our sea.

Thus was born the project of underwater chanting of Etna wines at 48 meters deep in the waters of the Marine Protected Area “Cyclops Islands”, between Aci Trezza and Aci Castello. The great dream of bringing Etna wine back to its marine origins. Back in time, when even in the prehistoric Quaternary era, the Plain of Catania did not exist and was occupied by a large gulf that became the volcano 3,290 meters high that we know today only following large sea eruptions. An ambitious project that has become a reality.

Under the powerful pressure of the sea of the Cyclops Islands Marine Protected Area, our wines are enriched with new nuances thanks to the velvety vibrations of the abyss and the muffled sounds.

Pioneering project University of Catania

In collaboration with the University of Catania we have launched the first study in the world on how underwater wines evolve over time. The experimental research is based on the constant monitoring of wines in underwater aging according to 14 different parameters between red and white wines, monthly analysis of marine samples during their stay under water and comparison with twin samples refined by the traditional method. The scientific study aims to highlight the specific effects of pressure, total darkness, absence of sound and constant temperature on wine.

Each bottle is a unique piece, made even more precious by the application of an exclusive brass seal made by hand with the traditional technique of cantilevering with rod and pointed by the famous Naples Brothers, masters and custodians of the Opera dei Pupi Catanese, proclaimed by Unesco Intangible Cultural Heritage of Humanity.
