Refine prestigious wines
at the bottom of the sea
Land and sea, fire and water, past and future, tradition and experimentation, roots and innovation.
A double track story that animates the identity and character of our wines and that dictates the rhythms of our underwater method of aging and the productive philosophy of the vineyards and cellars where our nectar is born.
Authentic Sicilian masterpieces, our wines are an expression of the extraordinary ancestral power of the sea and the uniqueness of the land of Etna and its viticulture.
Born from the primordial energy of fire that blazes under the volcanic earth, under the powerful pressure of the sea of the Protected Marine Area “Islands of the Cyclops”, are enriched with new shades thanks to the velvety vibrations of the abyss and muffled sounds, then emerging from the depths with all the harmony and beauty of the signature of the sea.
A new method of aging wines that brings with it the sign of ancestral forces, the ancient art of winemaking, the most modern science and the emotion of tasting.
FROM ETNA TO THE SEA OF THE ISLAND OF CYCLOPS
The heart of our underwater refinement process is our exclusive submerged cellar at 48 meters deep in the waters of the Cyclops Islands Marine Protected Area.
Formed by special metal cages capable of holding about 500 bottles of Etna wine, the cellar rests on the seabed in harmony with the marine ecosystem, not altering in any way the life of its flora and fauna.
To preserve and preserve the precious sunken wine, moreover, an innovative patented capsule to prevent sea water from entering the bottles.
OF SUBMARINE OAK AGEING
The underwater microclimate is characterized by a constant temperature, a natural air conditioning system ideal for the aging of wines
ABSENCE OF UV RAYS AND OXYGEN
The underwater darkness protects the wines from harmful UV rays and the osmotic and micro oxygenating process favors their longevity
The powerful pressure exerted by the sea on wines at a depth of 48 meters gives them unprecedented nuances and a unique complexity
WAVES AND CURRENT
The wave movement generated by the submarine currents favors the integration of adducts inside the liquids, guarantee of gustatory harmony
THE EVOLUTION OF SUBMARINE WINES
In collaboration with the University of Catania we have launched the first study in the world on how underwater wines evolve over time.
The experimental research is based on the constant monitoring of wines in underwater aging, the monthly analysis of marine samples during their stay under water and comparison with twin samples refined with the traditional method.
The Orygini submarine wine aging method represents a sustainable innovation with significant energy and environmental savings. According to an independent study, about 0.68 kg of CO2 are consumed in the traditional stage of chanting for each 0.75cl bottle. The underwater cantinamento, however, does not require the regulation of temperature and humidity with air conditioning and thermoregulation systems.
This is equivalent to a saving of about 680 kg of CO2 in the atmosphere for every 1000 bottles immersed.According to the first results, also, the underwater wine refines faster, reaching the same results as traditional cantinamento in less time, a zero impact savings with a positive return for the territory and the environment.
